Moose Dropping Cookies

I know, I know, why the name? Quite frankly, one glance at the cookies and I knew it was the only title that would do them justice. And let’s face it, the kid in all of us loves the novelty of eating poop. Believe me when I say they are the farthest thing from it, thankfully. Chocolate upon chocolate – and in cookie form too!

– 1 stick (1/2 cup) of butter, at room temperature
– 3/4 cup of white sugar
– 1 egg
– 2 tbsp. cocoa powder
– 1 tsp. baking powder
– 1/4 tsp. salt
– 1 cup of flour
– 1/2 cup chocolate chips (but you can always add more if the dough will hold it, and yes, it will!)

Preheat the oven to 350 F. Cream the butter and sugar until smooth (there should be no chunky pieces of butter remaining). You could do this with an electric beater but I prefer simply a wooden spoon or an everyday fork. Add the egg and mix to combine. Then add all of the dry ingredients at once. No need to do any fancy sifting or pre-mixing, just dump it all in. Mix until the dough comes together, add your chocolate chips and it is time to bake. I portioned out mini cookies using less than 1 tbsp. of dough for each, but you can make them larger if you prefer. Bake for 8-10 minutes at 350 F. Depending on size and how chewy you like them, this will vary. My batch made exactly 37 cookies. Or 37 bites of chocolatey goodness, if you look at it from that perspective! Enjoy!!!
