I really don’t have much to say about this Greek quinoa salad, other than the fact that it is delicious, super easy to make and you should definitely make a batch as soon as you get the chance. How’s that for short and to the point? Now if you don’t mind me, I am going to go enjoy the weather before it starts to snow again!

Serves: 4-6
Ingredients
  • 1 cup uncooked quinoa
  • 2 cups water
  • ¾ cup cucumber, finely diced
  • ¾ cup tomato, finely diced
  • 2 baby bell peppers, finely diced
  • a handful of black olives, pitted and finely chopped
  • ½ cup feta cheese, finely diced
  • 2 tbsp. good olive oil
  • 2-3 tbsp. balsamic vinegar
  • salt and pepper, to taste
Instructions
  1. Start by cooking the quinoa in the water. Bring it to a boil, turn it down to a simmer and let it go for about 20 minutes or until all of the liquid is absorbed.
  2. Put the cooked quinoa in a bowl and toss it with the remaining ingredients. Season with salt and pepper to taste. This salad is great made ahead of time, the longer it sits, the better it gets!
